Ingredients

12 ounces coconut milk ( do not shake can , you will want to use only the thick , creamy part )
3 tablespoons red curry paste
8 cups cooked white rice
1/3 cup coconut , shredded
1 tablespoon sugar
1 pinch salt
cornstarch , for dusting
3 eggs , beaten
oil ( for deep frying )
1 lb Spam , chopped ( you are supposed to use Som Moo )
1/2 cup shallot , sliced
3 tablespoons fish sauce
fresh cilantro , chopped for garnish
of fresh mint , chopped for garnish
dried chili
roasted peanuts , crushed

Instructions

1.In a mixing bowl, whisk together coconut milk and red curry paste.
2.Add cooked rice, shredded coconut, sugar and salt. Mix all ingredients together.
3.Heat a large wok over medium-high heat. Dust cornstarch over eggs and lightly beat them.
4.When the wok is hot, pour the egg mixture and fry until crispy.
5.Remove the egg from the wok and set it aside. Add oil to the wok and heat it until hot.
6.Add chopped Spam and fry until crispy. Then remove the Spam from the wok and set it aside.
7.In the same wok, add sliced shallots. Stir-fry until fragrant.
8.Add cooked rice mixture, fish sauce and stir-fry for a few more minutes.
9.Serve Nhem on a plate with crispy egg and Spam on top. Sprinkle with cilantro, mint, dried chili, and roasted peanuts for extra flavor.
