1 can dark red kidney beans
1 can white kidney beans
1 can black beans

4 lbs sweet potatoes or 4 lbs yams
1/8 cup olive oil
4 lbs domestic racks of lamb , left whole with silver skin removed

1 1/2 cups demi-glace ( brown sauce )
2 tablespoons tomato paste
2 sprigs fresh rosemary
2 tablespoons finely chopped fresh chives

Instructions
