Ingredients

1 kg gold kumara
1 large leek
300 g bacon bits
1 grated carrot
1 liter chicken stock ( or 2 stock cubes and water )
1 teaspoon mild indian curry powder
25 g butter
salt

Instructions

1.Peel and chop the kumara and set aside.
2.Remove the greens from the leek and finely chop the white and light green parts.
3.In a large pot, cook the bacon bits over medium heat until crispy.
4.Remove the bacon with a slotted spoon and set aside.
5.Add the butter to the pot and sauté the leeks and grated carrot until soft.
6.Add the curry powder and stir.
7.Add the kumara and chicken stock to the pot.
8.Bring to a boil, then reduce heat and simmer until the kumara is tender.
9.Use a stick blender to puree the soup until smooth.
10.Season with salt to taste.
11.Serve hot with crispy bacon bits on top.
