Ingredients

5 large ripe unblemished peaches
100 g caster sugar
1 vanilla pod
600 ml brandy
A modern twist on classic peaches, the New Zealand Brandied Peaches cocktail offers a refreshing way to enjoy peaches beyond the summer season. Instructions

1.Using a sharp paring knife, score the bottom of each peach with an ‘X’. Submerge peaches in boiling water for 15 seconds, then plunge them into ice-cold water. Peel the peaches, and cut each peach into 8-10 slices depending on size and pit.
2.Fill a clean jar with caster sugar, vanilla pod and peach slices. Add Brandy to fill the jar. Stir to combine the sugar and the Brandy.
3.Close the lid to seal the jar, give the jar a few gentle turns and store it in a dark cool place for at least 2 weeks. Once the flavor and aroma have developed according to your taste, strain the Brandied Peach mixture through a fine sieve or a cheesecloth, and transfer it to a bottle. Keep it stored in the fridge until its ready to use.
4.To make a cocktail, take 50 ml of the Brandied Peach mixture and combine it with 25ml of fresh lemon juice and 15ml of sugar syrup. Shake well with ice and strain into a flute, and top with Prosecco or Sparkling wine, and garnish with a Peach slice if desired.
