Ingredients

6 large Yukon Gold potatoes , peeled
1/4 cup butter
1 large onion , chopped
1 cube chicken bouillon , crumbled
salt and pepper to taste
18 sheets phyllo dough

The New York Knish - Yo is a popular Jewish snack food that originated in Eastern Europe. It is a small pastry filled with mashed potato and onion, and is typically eaten as an appetizer. Instructions

1.Boil the potatoes until tender, then mash them.
2.Melt butter in a large pan, add the chopped onion and cook until onion is soft.
3.Add mashed potatoes, chicken bouillon, salt and pepper to taste and stir well. Remove from heat and allow to cool.
4.Preheat your oven to 400 degrees Fahrenheit (200°C).
5.Take a sheet of phyllo dough and brush it with melted butter. Place another sheet on top and repeat until you have six sheets stacked on top of each other. Cut the stack into thirds, making six squares.
6.Place a spoonful of potato mixture into the center of each square and fold up the sides, pinching the edges together to form a sealed ball.
7.Repeat until all the potato mixture is used up.
8.Brush the tops of the knishes with melted butter and place them on a baking sheet. Bake for 20-25 minutes or until golden brown and crispy.

PROS

These knishes are a tasty appetizer that can be made in advance and reheated when needed.

They are vegetarian and can be made vegan by using margarine instead of butter.

CONS

The phyllo dough can be difficult to work with if it dries out, so be sure to keep it covered with a damp towel while working.
