The Colorado omelet is a classic American breakfast or brunch dish that originated in — you guessed it — Colorado. It is a hearty and filling meal that is perfect for slow mornings or lazy weekends when you have more time to indulge in a delicious homemade breakfast. This omelet is made with crispy bacon, fresh tomato, thinly-sliced turkey, melty Monterey Jack cheese, and creamy hollandaise sauce that comes together to create a flavorful and satisfying egg dish that will make your taste buds dance with joy!

Instructions

1.Cook bacon in a large skillet over medium heat until crisp. Remove, crumble, and set aside.
2.In a small mixing bowl, whisk together eggs and milk until well combined.
3.Heat vegetable oil in the same skillet over medium-high heat. Add diced tomato, and cook for 2-3 minutes, until soft. Add sliced turkey and continue to cook for another 2-3 minutes, until turkey is browned.
4.Pour the egg mixture into the skillet and stir briefly. Cook for 2-3 minutes or until set, lifting edges occasionally to allow any uncooked eggs to flow underneath.
5.Sprinkle cheese and crumbled bacon over half of the omelet. Use a spatula to fold the omelet in half and cook for an additional minute or until cheese is melted.
6.While the omelet is cooking, heat hollandaise sauce according to package instructions.
7.Serve omelet garnished with halved tomato slices, a drizzle of hollandaise sauce, and a sprinkle of dried parsley.
