Instructions

1.Heat the oven to 350 degrees F.
2.In a saucepan, melt the sugar and water over medium heat, swirling the pan occasionally, until it turns into a light brown caramel. Pour the caramel into a 9-inch round baking pan and tilt the pan to coat the bottom and sides.
3.In a large bowl, whisk together the warm milk, beaten eggs, and vanilla extract.
4.In a separate bowl, sift together the superfine flour and baking powder. Mix in the caster sugar, beaten eggs, and vanilla extract. Stir in the cooking oil.
5.Pour the batter into the prepared pan over the caramel.
6.Place the pan into a larger roasting pan and fill with water until it reaches halfway up the sides of the baking pan.
7.Bake for 50 to 60 minutes until cooked through. Check that the cake is done by inserting a toothpick into the center, it should come out clean.
8.Remove from the oven and let it cool completely before inverting onto a plate to serve.
