Ingredients

1 1/2 kg beef ribs
1/2 cup coriander leaves
10 garlic cloves , crushed
1/2 cup hoisin sauce
4 long spring onions , roughly chopped
1 tablespoon fresh ginger , peeled and sliced
90 ml light soy sauce
60 ml shaoxing wine ( Chinese cooking wine )
18 red dates ( I substituted 8 medjool dates , diced )
3/4 cup roasted peanuts , unsalted
3 whole star anise
1 cinnamon stick
2 large piece orange peel ( using a peeler )
3 cups chicken stock
1 1/2 tablespoons rock sugar , crushed ( available from Asian supermarkets , I substituted demerara sugar )
Neil Perry's Chinese Braised Beef Ribs are a delicious and hearty dish that's perfect for dinner tonight. The beef ribs are slow-cooked in a flavorful marinade of soy sauce, hoisin sauce, ginger, and other spices, resulting in juicy and tender meat that falls off the bones. The dish is typically served with steamed rice or noodles, and pairs well with a side of sautéed vegetables like bok choy or Chinese broccoli. The recipe is inspired by traditional Chinese braised beef dishes and has been adapted by Neil Perry to suit modern palates.

Instructions

1.Preheat the oven to 150C.
2.In a food processor, blend the coriander leaves, garlic, hoisin sauce, spring onion, ginger, soy sauce, shaoxing wine, red dates, roasted peanuts, star anise, cinnamon stick, orange peel, chicken stock, and rock sugar until smooth.
3.Combine beef ribs and marinade in a deep baking dish. Cover with aluminum foil.
4.Bake covered for 2-2.5 hours, or until beef is tender and falling off the bone.
5.Remove the aluminum foil and increase the oven temperature to 190C. Cook for an additional 15-20 minutes or until the ribs are caramelised and glazy.
