Ingredients

2 tablespoons olive oil
1 small onion , chopped
2/3 cup fresh cilantro , chopped
3 minced garlic cloves
1 can diced tomatoes
4 cups chicken broth
3/4 tablespoon cumin
1/2 tablespoon chili powder
1/4 teaspoon cayenne pepper
1 -2 bay leaf
2 carrots , thinly sliced
2 skinless chicken breasts , halved and thinly sliced
3/4 teaspoon salt
pepper
1/2 cup shredded monterey jack cheese
1 -2 avocado , diced
16 ounces tortilla chips
Chicken Tortilla Soup is a Tex-Mex classic that is hearty and delicious. This version of the soup is full of flavor, with a blend of spices that give a kick of heat and depth of flavor. The broth is made from chicken, which is a great source of protein and low in fat. Carrots and tomatoes add a healthy dose of vegetables to the soup while cilantro and avocado provide a burst of freshness. It's best served with shredded cheese, diced avocado and tortilla chips for some added crunch.

Instructions

1.Heat 2 tablespoons of olive oil in a large pot over medium heat.
2.Add in 1 small chopped onion and saute until translucent and fragrant.
3.Add in 2/3 cup of chopped fresh cilantro and minced garlic clove and cook until fragrant, about a minute.
4.Add in 1 can of diced tomatoes, 4 cups of chicken broth, 3/4 tablespoon of cumin, 1/2 tablespoon of chili powder, 1/4 teaspoon of cayenne pepper and 1-2 bay leafs.
5.Bring to a boil, reduce heat to low and simmers for 10 minutes.
6.Add in thin sliced 2 carrots and 2 skinless chicken breasts that are halved and thinly sliced, 3/4 teaspoon of salt and pepper to taste.
7.Simmer for 20-25 minutes until chicken is cooked through.
8.Serve with shredded Monterey Jack cheese, diced avocado and tortilla chips.
