Ingredients

325 g strawberries , halved and hulled
300 g butter , softened , plus extra for greasing
375 g caster sugar
3 teaspoons vanilla extract
284 ml pot buttermilk
3 eggs
375 g self-raising flour , sifted
1 1/2 teaspoons bicarbonate of soda
100 g dark chocolate , melted
1 package pink gel food coloring
700 g icing sugar
6 -7 tablespoons milk
20 g dark chocolate , grated
Neapolitan Layer Cake is a classic dessert consisting of layers of vanilla, chocolate, and strawberry-flavored cake. The colors of the cake, pink, brown and white, resemble the traditional colors of Neapolitan ice cream, hence the name. The cake is finished off with a fluffy buttercream frosting and fresh strawberries. This cake is a showstopper for any occasion, from birthdays to weddings, or a special treat for any dessert lover.

Instructions

1.Preheat the oven to 180°C/fan160°C/gas 4. Grease and line three 20cm sandwich tins.
2.Using an electric whisk, cream 250g of the butter and 250g of the caster sugar together until light and fluffy.
3.Beat in 2 teaspoons of the vanilla extract.
4.Beat in 1 egg, then stir in a quarter of the buttermilk followed by a third of the flour, then repeat until everything is added and mixed well together. Divide the mixture between 2 bowls, stir the melted chocolate into one with 2-3 tablespoons boiling water, and stir the food coloring into the other.
5.Spoon the batters alternately into the tins, then swirl a skewer through. Bake for 25-30 mins until risen and a skewer poked in comes out clean. Cool for 10 mins in the tins, then turn out onto a wire rack and cool completely.
6.To make the buttercream, beat the remaining 50g butter until creamy, then beat in the remaining vanilla extract.
7.Add the icing sugar, a little at a time, then beat in enough milk to make the frosting fluffy and spreadable.
8.Use a quarter of the frosting to sandwich the cakes in alternate layers of color, then spread the rest over the outside of the cake.
9.Decorate with the strawberries and chocolate shavings.
