Instructions

1.Preheat oven to 375F
2.In a medium bowl, mix all Corn Salsa ingredients together and set aside.

4.Brush portobello mushrooms with oil and sprinkle with spice mixture.
5.Bake the mushrooms for 10-15 minutes or until they are fork-tender.
6.In another small bowl, mix refried black beans with the same spice mixture, and heat in the microwave for 1-2 minutes or until warmed.
7.Place mushroom cups into a baking dish, spoon refried black bean mixture on the bottom of each cup, top with corn salsa, avocado, tomato, and cheddar cheese.
8.Bake for an additional 5-6 minutes until cheese is melted.
9.Garnish with cilantro and jalapeno (if desired) and serve warm.
