14 ounces dried black beans , medium sized bag , soak and drained twice
1 large onion , chopped
2 celery ribs , chopped
1 teaspoon fresh cilantro
1 1/2 teaspoons dried chipotle powder
1 teaspoon onion powder
1 tablespoon instant minced garlic or 3 fresh garlic cloves
1 1/2 teaspoons cumin
2 bay leaves
kosher salt
1 lime , juice of
1/2 teaspoon lime rind
12 ounces chicken stock , canned ok
2 -3 smoked ham hocks
1 lb cajun sausage

Instructions

1.Rinse and pick through the black beans. Soak in cold water overnight or up to 12 hours.
2.After soaking, drain the beans, rinse again, and put in a large soup pot with 6 - 8 cups of water.
3.Add smoked ham hocks, onion, celery, cilantro, garlic, bay leaves, cumin, onion powder, and chipotle powder.
4.Place the pot on high heat. Once boiling, reduce to medium-low and simmer for 1 1/2 to 2 hours or until beans are tender.
5.Add diced cajun sausage, chicken stock, lime juice, and lime rind. Stir well and continue cooking for an additional 30 to 45 minutes or until the sausage is fully cooked.
6.Before serving, remove ham hocks and bay leaves. Season with salt to taste. Serve warm with a side of rice or quinoa.
