Ingredients

1 cup yogurt , beaten till smooth
1/4 cup beetroot , boiled and finely chopped
1/4 cup carrot , finely chopped
1/4 cup cucumber , finely chopped
1/4 cup red capsicum , finely chopped
1/4 cup onion , finely chopped
2 green chilies , finely chopped
2 tablespoons coriander leaves , finely chopped
1 tablespoon mint leaf , finely chopped
salt
pepper
red chili powder
2 tablespoons almonds , blanched , skin removed and thinly sliced ( lengthwise )
Navratan Raita is a popular Indian side dish that is served with biryani, pulao or any spicy curry. The word 'Navratan' means nine gems in Hindi, which refers to the nutrient-rich ingredients in this raita. The combination of yogurt and mixed vegetables makes it a refreshing and healthy dish. Instructions

1.In a mixing bowl, add beaten yogurt and mix in salt, pepper and red chili powder.
2.Add in the finely chopped beetroot, carrot, cucumber, red capsicum, onion, green chilies, coriander leaves and mint leaf. Mix well until all the vegetables are coated in yogurt.
3.Garnish with thinly sliced almonds, chill for 10-15 mins in fridge and serve chilled.
