Ingredients

2 cups plain yogurt
1 cup buttermilk
1 1/2 cups diced mixed vegetables ( carrots , beans , greenpeas , potatoes and cauliflower )
1 small tomatoes , washed , peeled and finely chopped
2 small onions , peeled , washed and finely chopped
1 teaspoon oil
1 inch fresh ginger
6 raisins
6 cashews
salt
2 teaspoons fresh cream
oil , to fry
3 large green chilies
2 teaspoons fresh cream
1 tablespoon chopped fresh coriander leaves
1/4 cup pineapple , pcs .
1/4 cup apple , pcs .
1 pinch red chili powder
1 pinch cumin powder
1 pinch garam masala powder
Navaratan Raita is a popular variant of raita in North Indian cuisine. 'Navaratan' means nine gems, and the dish is named after the nine different ingredients used in it. The dish is a unique blend of flavors and textures, with the addition of chopped fruits and vegetables along with fried nuts and onions. Instructions

1.In a mixing bowl, whisk together yogurt and buttermilk until smooth
2.Heat oil in a small wok, add chopped ginger, slit green chilies and fry till ginger is golden brown in color
3.Take out the fried ginger on a kitchen towel, fry cashews till golden brown in color, drain and keep aside
4.In the remaining oil, fry sliced onions till golden brown in color
5.Keep aside a tablespoon of fried onion for garnishing, mix rest of the fried onion along with raisins into the whisked yogurt and buttermilk mixture
6.Add chopped tomatoes, pineapple, apple, coriander, cumin powder, garam masala powder, red chili powder and salt. Mix it properly
7.Add fried ginger, fried chili and fried cashews. Mix well
8.Cover and refrigerate for at least 2 hours before serving
9.Garnish with the fried onion and fresh cream and serve chilled
