Ingredients

2 pork tenderloin
1 cup bean sprouts ( I use a handful , not measured )
3 tablespoons cilantro ( chopped , leaf and stem )
1 tablespoon pickled ginger ( minced )
1/2 cup teriyaki sauce ( I use my Nat 's Teriyaki Sauce )
salt and pepper

Instructions

1.Preheat oven to 425 degrees F (220 degrees C).
2.Butterfly each pork tenderloin by slicing lengthwise down the center, being careful not to cut all the way through.
3.Place the butterflied pork tenderloin between two sheets of plastic wrap, and pound with a meat mallet until flattened to an even thickness.
4.Season both sides with salt and pepper.
5.In a bowl, stir together the bean sprouts, cilantro, and pickled ginger.
6.Place half of the bean sprout mixture on top of each pork tenderloin.
7.Roll the pork tenderloin tightly around the bean sprout filling, and tie with kitchen twine to secure.
8.Brush the top of each pork tenderloin with teriyaki sauce.
9.Place the pork tenderloins in a large baking dish, and bake for 25-30 minutes, or until cooked through, brushing with more teriyaki sauce every 10 minutes.
10.Let the pork rest for 5-10 minutes, then slice and serve.
