Instructions

1.Preheat the oven to 375°F.
2.For the béchamel sauce: Melt butter in a saucepan over medium heat. Whisk in the flour and stir until it forms a paste, then gradually whisk in the milk. Add the chopped tomatoes and season with salt and pepper to taste.
3.For the filling: Melt butter in a sauté pan over medium heat. Add onions and sauté until soft, then add mushrooms and cook until they release their liquid. Add cooked chicken and broccoli and stir to combine. Remove from heat and stir in 1/2 cup of the béchamel sauce and 1/2 cup of the grated parmesan cheese.
4.Fill the cannelloni tubes with the chicken and broccoli mixture and place in a 9x13 inch baking dish. Pour the remaining béchamel sauce on top and sprinkle with the remaining parmesan cheese.
5.Bake for 40 to 45 minutes or until golden and bubbly. Let cool for a few minutes before serving.
