Instructions

1.Preheat oven to 400°F (200°C).
2.Slice eggplant into rounds of about 1/4 inch thickness.
3.Cook bacon over medium heat in a large skillet until crispy. Remove from the skillet and drain on paper towels.
4.In the same skillet, add the spaghetti sauce and stir in over medium heat.
5.In a mixing bowl, mix together crumbled feta cheese, ricotta cheese, and half of the shredded mozzarella cheese.
6.In a baking dish, start layering sliced eggplant, then spaghetti sauce, then the cheese mixture, and then bacon. Repeat the layers until all the ingredients are used up or until the baking dish is full. Sprinkle salt and pepper over the top layer.
7.Add the remaining shredded mozzarella cheese on top.
8.Bake for 35-40 minutes or until the cheese is melted and bubbling.
