8 ounces self raising flour
4 ounces shredded suet or 4 ounces grated frozen butter
salt
cold water , to mix
5 -6 tablespoons jam , of your choice or 5 -6 tablespoons golden syrup
butter , for greasing

The soft, fluffy sponge is filled with sweet jam or golden syrup and baked to perfection. Instructions

1.Preheat the oven to 180C/160C fan/gas 4.
2.Mix together the flour, suet or grated butter, a pinch of salt and enough cold water to make a soft, spongy dough.
3.Roll out the dough to a rectangle approximately 30cm x 20cm.
4.Spread the jam or golden syrup over the dough.
5.Roll it up tightly, tucking in the ends to make a neat parcel.
6.Grease a sheet of foil with butter, wrap the pudding in it and seal the edges tightly.
7.Place the wrapped pudding in a roasting tin and add enough boiling water to come halfway up the sides of the pudding.
8.Bake in the preheated oven for 1 hour.
9.Remove and serve.
