125 g butter
1 1/4 cups caster sugar
1 cup water
2 tablespoons cocoa powder
1/2 teaspoon bicarbonate of soda
2 eggs
1 1/2 cups self-raising flour
1/2 cup sultanas or 1/2 cup any dried fruits
1/2 cup chopped walnuts
1 -2 dash rum

Instructions

1.Preheat your oven to 180°C (160°C fan-forced). Grease a 20cm round cake tin and line the base with baking paper.
2.Melt the butter, sugar, water, cocoa, and bicarbonate of soda in a medium-sized saucepan over a low heat, then allow to cool.
3.Add the eggs, flour, sultanas, and walnuts to the cooled mixture and mix well.
4.Pour the batter into the prepared cake tin. Bake for 40-45 minutes or until a skewer inserted into the centre of the cake comes out clean.
5.While the cake is still warm, poke holes in the top with a skewer and sprinkle with rum. Allow to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
