1 1/2 lbs ground chuck
24 ounces salsa
10 flour tortillas
8 ounces ricotta cheese
2 eggs
10 ounces grated monterey jack cheese

Instructions

1.Preheat oven to 350°F
2.In a large skillet over medium heat, cook ground chuck until browned. Drain and stir salsa into skillet.
3.Grease a 9×13 inch baking dish. Spread half the tortillas in baking dish. Cover with half of the meat mixture, then sprinkle with half of the Monterey Jack cheese.
4.Repeat layers
5.In a small bowl, beat together eggs and ricotta cheese. Spread mixture evenly over top of lasagna.
6.Bake for 20 to 25 minutes, or until heated through. Let stand 5 minutes before cutting. Enjoy!
