Ingredients

200 g of lamb fat , Can be cut out from the lamb meat
1 kg lamb , cut into about 1 inch cubes
4 tomatoes
5 green chilies
1 small ginger
3 3 tablespoons ghee or 3 tablespoons sunflower oil

Instructions

1.In a blender, make a paste of 4 tomatoes, 5 green chilies, and 1 small ginger.
2.In a frying pan, heat 3 tbsp ghee or sunflower oil and add the lamb meat and fat.
3.Fry the meat until it changes color, and then remove it from the pan.
4.In the same pan, add the tomato paste and cook until the oil separates from the mixture.
5.Add the meat back to the pan, along with salt to taste, and 1/2 cup water.
6.Cover the pan and let it cook on low heat until the meat is tender and fully cooked.
7.Remove the lid, check if the water has evaporated, and then cook for a few more minutes to dry out any remaining water in the pan.
8.Garnish with fresh coriander leaves and serve hot.
