Ingredients

12 small dried red chili peppers
2 stalks lemongrass , thinly sliced
2 large shallots , thinly sliced
4 garlic cloves , chopped
2 teaspoons coriander seeds
1 teaspoon salt
2 teaspoons minced fresh or frozen galangal
1 teaspoon shrimp paste
1 -2 tablespoon water

Instructions

1.Soak the dried chili peppers in hot water for 10-15 minutes until soft.

3.Add in the galangal, shrimp paste, and water and continue grinding until the paste is well combined.
