Ingredients

1 head white cabbage ( )
1 1/2 cups minced onions
1/2 cup fine dry white bread crumbs
3/4 cup milk or 3/4 cup half-and-half
4 tablespoons butter
1 tablespoon sugar or 1 tablespoon honey
1 tablespoon salt
1 teaspoon marjoram
5 egg whites
3 egg yolks
1 cup cottage cheese , pressed & drained
1/4 teaspoon cayenne pepper

Instructions

1.Cut the cabbage into quarters and remove the core and outer leaves
2.Shred the cabbage into thin strips
3.In a large pot, melt the butter over medium heat. Add the onions and cook until they are soft and translucent, about 5-7 minutes
4.Add the shredded cabbage to the pot and stir to combine. Add the salt, marjoram, sugar or honey, and cayenne pepper. Cook, stirring often, until the cabbage is tender, about 15-20 minutes
5.Preheat the oven to 375 degrees F (190 degrees C)
6.In a bowl, whisk together the egg yolks, milk or half-and-half, and cottage cheese
7.In a separate bowl, beat the egg whites until stiff peaks form
8.Fold the egg yolk mixture into the cabbage until well combined
9.Fold in the beaten egg whites until just combined
10.Pour the mixture into a greased 2-quart souffle dish and sprinkle the bread crumbs evenly over the top
11.Bake for 45-50 minutes, until the souffle is puffed and golden brown
12.Serve hot
