Ingredients

1 lb lean ground meat
3 large zucchini
1/2 teaspoon black pepper
1/4 teaspoon garlic salt
1/2 teaspoon italian seasoning
2 green bell peppers , cubed ( or red bell peppers )
1 jar prepared marinara sauce
1 large onion , cubed
1 cup shredded mozzarella cheese ( you can lessen cheese if you wish )
1/2 cup grated parmesan cheese
This zucchini lasagne is a healthy and delicious twist on the classic Italian pasta dish. The recipe replaces the lasagne noodles with layers of thinly sliced zucchini, making it a great option for anyone following a low-carb or gluten-free diet. Instructions

1.Preheat the oven to 375°F.
2.Cook the ground meat in a large skillet over medium-high heat until browned and cooked through.
3.Add the onion, green or red bell peppers, black pepper, garlic salt, and Italian seasoning. Cook for 5-7 minutes or until the vegetables are softened.
4.Stir in the marinara sauce and remove from heat.
5.Cut the zucchini lengthwise into thin slices (about 1/8” thick). Try to slice each one as evenly as possible.
6.In a 9x13 inch baking dish, layer the zucchini slices to completely cover the bottom.
7.Spoon a third of the meat sauce over the zucchini slices and spread evenly.
8.Sprinkle 1/3 of the mozzarella cheese and parmesan cheese over the meat sauce.
9.Repeat the layers of zucchini slices, meat sauce, and cheese two more times, making sure to end with a layer of cheese on top.
10.Cover the dish with foil and bake for 30 minutes.
11.Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and golden brown. Let the lasagne cool for a few minutes before serving.
