Ingredients

2 heads garlic , separated into cloves and peeled
1 cup half-and-half cream
2 whole chickens
1 cup hazelnuts , shelled or 1 cup roasted unsalted shelled pistachio
1/2 bunch basil leaves , cut into chiffonade
1 tablespoon fresh thyme leave , chopped
1 lemon , zest of
4 teaspoons salt
2 teaspoons fresh ground black pepper
My Very Favorite Chicken Terrine is a classic French dish made with chicken, garlic, hazelnuts or pistachios, basil, thyme, and lemon zest. It's a rich and flavorful dish that's perfect for a special occasion or holiday meal. This dish is typically served cold or at room temperature and can be enjoyed as an appetizer or as part of a larger meal. The terrine can be made in advance and refrigerated until ready to serve, making it a convenient and delicious option for entertaining guests.

Instructions

1.Preheat oven to 375°F.
2.Pulse garlic in a food processor until finely chopped.
3.Add cream and pulse until smooth.
4.Cut chicken into cubes and add to the food processor. Process until smooth.
5.Add the hazelnuts or pistachios, basil, thyme, lemon zest, salt and black pepper. Pulse until mixture is evenly mixed.
6.Pour mixture into a loaf pan. Cover the pan with plastic wrap. Place the pan into a larger pan that has been filled with water.
7.Bake for 1 to 1 1/2 hours or until terrine is cooked through. Remove from the oven and let cool.
8.Once the terrine has cooled, refrigerate for at least 2 hours or until firm. Slice and serve with bread or crackers.
