1 lb ground turkey
1 egg
3 slices whole grain bread
black pepper
1 garlic clove , finely minced
1 teaspoon Chinese five spice powder
2 tablespoons cilantro , chopped
9 scallions , 3 finely chopped , 6 cut into 2-inch lengths
2 tablespoons tamari dark soy sauce , divided
1/3 cup tamari dark soy sauce , divided
cooking spray
2 cups snow pea pods , thinly sliced on an angle
1 red bell pepper , very thinly sliced
2 inches gingerroot , grated
4 garlic cloves , grated
1 lb spinach , coarsely chopped
1 tablespoon toasted sesame oil
3 tablespoons toasted sesame seeds
My Version of Rachael Ray's Chinese Spaghetti and Meatballs is inspired by an original recipe by American celebrity chef Rachael Ray. Adding a Chinese twist to a classic dish, the lean turkey meatballs represent the iconic American meatballs while the spaghetti is swirled in delicious, umami-packed, dark soy sauce. Sweet bell peppers and crunchy snow peas pop with vibrant colors, adding a healthy dose of potassium, magnesium, and dietary fiber. The grated ginger and garlic amalgamate the dish with their irresistible aroma. Garnished with a generous sprinkle of toasted sesame seeds, this noodle dish is both a treat and a nourishing meal.

Instructions

1.Preheat your oven to 400°F. Line a baking sheet with parchment paper.
2.Cook spaghetti in salted water for 6 minutes, until just tender. Drain and rinse with cold water. Set aside.
3.In a mixing bowl, combine ground turkey, egg, bread, black pepper, garlic, Chinese five spice powder, cilantro, finely chopped scallions, and 2 tbsp. soy sauce. Mix well.
4.Shape the mixture into small meatballs and place them on the prepared baking sheet. Bake for 15 minutes or until golden and cooked through.
5.In a large skillet over medium heat, add 1 tbsp. cooking spray. Cook snow peas, red bell pepper, grated ginger, grated garlic, and remaining scallions for 2 minutes.
6.Add the spinach and cook for another minute until wilted and tender.
7.Toss with the cooked spaghetti, sesame oil, toasted sesame seeds and 1/3 cup soy sauce. Serve immediately.

Whole wheat pasta provides complex carbs and fiber. Turkey is a great and healthy alternative to traditional beef meatballs, given it’s a leaner protein source containing less fat and fewer calories. Snow peas, peppers, and spinach add vitamins and minerals, along with antioxidative and anti-inflammatory compounds.

Soy sauce is high in sodium, so low-sodium tamari is used in this recipe. Feel free to experiment with other low-sodium or sodium-free sauces. Using whole-grain bread in meatballs can also enhance the fiber content of the dish.
