1 large baking potato
1 teaspoon butter ( as much or little as you like , you can omit it if you wish , )
1/2 cup grated cheese
2 slices bacon , cooked and crumbled ( or you could use shredded ham )
1/2 cup pineapple , drained ( chunks or crushed )
1/2 cup Coleslaw ( any type you like is fine )
sour cream
1/4 cup beetroot ( drained and chopped )

Instructions

1.Preheat the oven to 220°C (200 °C fan).
2.Pierce the potato with a fork several times to allow air to escape.
3.Rub the potato with butter and season with salt and black pepper.
4.Bake the potato in the oven for 50 to 60 minutes or until the skin is crisp and the flesh is soft.
5.Remove the potato from the oven and slice it gently down the middle without cutting through the bottom.
6.Fluff the inside of the potato with a fork and add the grated cheese, cooked and crumbled bacon, pineapple, coleslaw, chopped beetroot and a dollop of sour cream to each side of the potato.
7.Put the loaded potato back in the oven for an additional 5 minutes or until the cheese has melted and the toppings are golden brown.
8.Serve hot and enjoy!
