1 onion , chopped
4 large garlic cloves , minced
1 tablespoon spanish paprika

1/2 teaspoon cayenne pepper
1 1/2 quarts homemade chicken broth
1 can crushed tomatoes , in thick puree
1 can Mexican-style corn , drained
2 bay leaves
2 1/2 teaspoons salt
1/4 cup fresh cilantro , chopped , plus
3 tablespoons fresh cilantro , for garnish
1 3/4 lbs boneless skinless chicken breasts , cooked and cut into 1/2 inch pieces
1 avocado , diced into 1/2 inch pieces
1/4 lb cheddar cheese , grated
lime wedge , for garnish

Instructions

1.In a stockpot over medium heat, heat 4 tablespoons olive oil. Add the tortilla strips and cook, stirring occasionally, until crispy and golden-brown, about 3 minutes.
2.With a slotted spoon, transfer the tortilla strips to a paper towel-lined plate and set aside.
3.In the same stockpot, heat the remaining 2 tablespoons olive oil over medium-high heat. Add the onion and garlic and cook, stirring occasionally, until softened, about 5 minutes.
4.Add spanish paprika, ground cumin, ground coriander, chili powder, and cayenne pepper. Cook, stirring constantly, for 1-2 minutes until fragrant.
5.Add the chicken broth, crushed tomatoes, corn, bay leaves, and salt. Bring to a boil, reduce the heat to low, and simmer for 30 minutes.
6.Add the cilantro and cooked chicken to the pot, and cook until heated through, stirring occasionally, about 5 minutes.
7.Serve topped with crispy tortilla strips, diced avocado, grated cheddar cheese, and fresh cilantro. Garnish with lime wedges.
