Ingredients

2 cups uncooked long-grain white rice
1 large onion , chopped
1/2 cup chopped fresh dill
1/2 cup chopped fresh mint leaves
2 quarts chicken broth
3/4 cup fresh lemon juice , divided
60 grape leaves , drained and rinsed
hot water as needed
1 cup olive oil
My Own Famous Stuffed Grape Leaves is a classic Greek recipe that I have adapted over the years to include my own personal touches. A delicious vegetarian appetizer, these grape leaves are stuffed with a mixture of rice, herbs, and lemon for a light and refreshing flavor. Typically served chilled or at room temperature, this dish is perfect for a summer get-together or an outdoor party. The grape leaves can be a bit chewy and have a perfect texture, and the flavors of the dill and mint complement each other perfectly. Serve this dish with a side salad or some tzatziki for a complete Greek feast!

Instructions

1.Rinse the uncooked rice with water in a fine mesh strainer until the water runs clear.
2.In a large mixing bowl, combine the uncooked rice, chopped onion, dill, mint, 3/4 cup of the lemon juice, and 2 cups of chicken broth. Mix well.
3.Take each grape leaf and fill it with 1 tablespoon of the rice mixture. Roll the grape leaf around the filling, making sure that the edges are tucked in.
4.In a large pot, lay the rolled grape leaves tightly in a circular pattern. Pour the remaining chicken broth, olive oil, and remaining 1/4 cup lemon juice over the rolled grape leaves.
5.Place a heatproof plate on top of the grape leaves to weigh them down and keep them in place.
6.Pour enough hot water over the plate to just come to the rim of the plate. Cover the pot with a lid and bring to a simmer over medium-high heat.
7.Reduce the heat to low and cook the grape leaves for 60-75 minutes, until the rice is fully cooked. Remove from heat and let cool. Serve chilled or at room temperature.
