1 potato
1/2 large carrot , diced
1 tablespoon olive oil
2 tablespoons butter , divided

2 cups cooked white rice
3/4 cup peas

Instructions

1.Boil the diced potato and carrot for 5-7 minutes or until tender. Drain and set aside.

6.Heat the remaining butter in a non-stick frying pan until foamy. Pour in the egg mixture, tilting the pan to spread the egg evenly.
7.When the egg is set but still slightly runny on top, spoon the rice mixture onto one side of the egg.
8.Lift the pan and fold the egg over the rice mixture. Slide the omurice onto a plate, cut open the egg to reveal the rice, and serve hot.
