Ingredients

1 bag brown lentils
4 potatoes , diced and peeled
2 large carrots , diced and peeled
4 cups chicken broth ( may need more or can use some water too )
5 pieces bacon ( cooked and broken up )
6 bratwursts
My Omas Lentil Soup is a family recipe that has been passed down for generations. It's a staple in my household during the chilly winter months when we yearn for something warm and hearty. We usually serve it with some crusty bread on the side. This soup is perfect for busy days, as it takes less than an hour to prepare, and it's easily customizable. Do you have any leftover veggies or meats in your fridge? Just throw them in! This soup will taste great either way.

Instructions

1.Rinse lentils and add to a pot with enough water to cover them.
2.Bring to a boil and then reduce to a simmer for 15-20 minutes.
3.Add chopped potatoes and carrots and chicken broth (add more or water if needed).
4.Cook until vegetables are soft and lentils are tender.
5.In the meantime, cook bacon until crispy and set aside.
6.Pan fry the bratwursts and then slice into 1/2 inch pieces.
7.Add sliced bratwursts and broken up bacon to the soup.
