1 tablespoon pearl barley
4 carrots
2 onions
2 stalks celery
400 g vegetable soup
43 g knorr minestrone soup mix
50 g knorr oxtail soup mix
2 Oxo beef cubes
1300 ml water
550 g braising steak
My mum's beef stew is a family favourite in my house. It's a hearty and comforting meal that is perfect for cold winter evenings. The stew is loaded with tender braised beef, barley, carrots, onions and celery. The stew is filling, and the barley gives it great texture. The beef, combined with pearl barley, makes it high in protein and a great source of energy. The oxtail and minestrone soup mix adds a rich savory taste to the stew. It's easy to prepare and a one-pot meal that requires minimal cleanup, making it perfect for busy days. Serve with some crusty bread to soak up the rich broth.

Instructions

1.Begin by rinsing and soaking 1 tablespoon of pearl barley in water for 30 minutes.
2.Cut 550g of braising steak into bite-size chunks and brown in a pan over medium-high heat.
3.Add 2 chopped onions and 2 celery stalks diced into small cubes to the pot with the steak, sauté until golden brown.
4.Add 2 packs of Knorr minestrone soup mix and 1 pack of Knorr oxtail soup mix to the pot.
5.Add in 400g of vegetable soup, 2 Oxo beef cubes, 4 sliced carrots and stir until well combined.
6.Drain the water from the barley and add it to the pot.
7.Finally, add 1300ml of water, bring the stew to boil, reduce the heat, and simmer for 2-3 hours until the beef is tender. Serve hot.
