Ingredients

12 poblano chiles
1/2 1/2 lb asadero cheese or 1/2 lb monterey jack cheese
1/2 cup water
1/4 cup vegetable oil
1 tablespoon olive oil
3 eggs , whites and yolks separated
flour , as much as needed
5 medium tomatoes
1 onion , cut in thin slices
1 garlic clove
1 teaspoon dried oregano
1 tablespoon sugar
salt and pepper
My Mom's Chiles Rellenos recipe is a traditional Mexican dish that has been in my family for generations. This dish is a staple in our household and is typically reserved for special occasions or a hearty family dinner. The dish consists of poblano chiles that are stuffed with cheese, battered and deep-fried until golden brown. It is served with a red tomato sauce and rice for a complete meal. The cheese filling is what makes this dish truly special; we typically use asadero cheese, but it can be substituted with other types of cheese like Monterey jack or queso fresco. Instructions

1.Roast the poblano chiles on the stovetop or in the oven until the skins are charred.
2.Place the chiles in a plastic bag or covered bowl until they are cool enough to be handled.
3.Peel the charred skin off the chiles and make a small slit near the stem to remove the seeds.
4.In a skillet, add 1 tablespoon of olive oil then add tomatoes, onion, garlic, oregano, sugar, salt and pepper.
5.Cook for 10-15 minutes, until the onion is tender and translucent.
6.Stuff the chiles with the cheese and close the slit with toothpicks.
7.In a separate bowl, beat the egg whites until stiff peaks form.
8.Beat the egg yolks and gently fold into the whites.
9.Coat the stuffed chiles with a flour and egg batter.
10.In a pan, heat the vegetable oil and fry the chiles until golden brown.
11.Serve hot with tomato sauce and rice.
