Ingredients

500 g dried haricot beans
2 1/2 liters water
6 1/2 teaspoons paprika
3 1/2 teaspoons ground cumin
1 can plum tomatoes , pureed or 400 ml passata
6 garlic cloves , minced or 6 garlic cloves , finely chopped
6 -8 6 -8 pieces lamb or 6 -8 pieces beef
4 tablespoons olive oil
1 pinch black pepper
2 1/2 teaspoons salt
olive oil , & vinegar to serve
My Loubia, also known as Lubia or Loobia, is a classic Algerian dish that is rich in flavor and history. Made with dried beans, meat, and spices, this dish is a staple in North African cuisine. Instructions

1.Soak the beans in water overnight or for at least 6 hours.
2.Once the beans have soaked and swollen, drain the water and rinse.
3.In a large pot, heat the olive oil and add the meat pieces. Brown the meat on all sides until completely cooked.
4.Add the minced garlic and cook until fragrant.
5.Add the beans and 2 1/2 liters of water. Bring to a boil and then reduce the heat to medium-low and simmer for 1 1/2 hours.
6.After 1 1/2 hours, add the paprika, ground cumin, black pepper, and salt. Mix everything well and then add the pureed tomatoes or passata.
7.Simmer for an additional 30 minutes until the sauce has thickened and the flavors have melded together.
8.Serve hot with a drizzle of olive oil and a splash of vinegar.
