1/3 cup caster sugar ( super fine )
150 ml water
3 egg yolks

Instructions

1.Break the chocolate into small pieces and put them in a heatproof bowl over a pan of simmering water. Stir until it has melted.

3.Beat the egg yolks and egg together and gradually whisk in the sugar and water mixture. Continue to whisk until the mixture becomes thick and frothy.

6.Divide the mixture between six individual ramekins, and chill for at least two hours before serving.
