Ingredients

180 g butter ( preferably unsalted )
200 g icing sugar
60 g plain flour , sifted
120 g ground almonds
5 large egg whites
1 teaspoon grated fresh lemon rind or 1 teaspoon orange rind ( i prefer orange )
icing sugar , for dusting

Instructions

1.Preheat the oven to 180°C.
2.Melt the butter in a saucepan and let it cool.
3.Sift the icing sugar and plain flour into a large mixing bowl.
4.Add the ground almonds and mix.
5.Beat the egg whites until frothy, then mix them in with the dry ingredients.
6.Add the melted butter to the mixture and mix thoroughly.
7.Add the grated orange or lemon rind and mix once more.
8.Pour the mixture into friand moulds and bake for 20-25 minutes.
9.Remove from oven and let them cool down.
10.Dust the friands with icing sugar and serve.
