1 cup flour
1/4 sugar
8 tablespoons unsalted butter , room temperature
16 ounces cream cheese , room temperature
1/2 cup sugar
3 -4 tablespoons grated lemon zest
1 cup yogurt
10 tablespoons fresh lemon juice
3 large eggs , room temperature

Instructions

1.Preheat your oven to 350°F (180°C).
2.In a medium mixing bowl, combine the flour and sugar. Add in the room temperature butter and mix until a dough forms.
3.Press the dough into the bottom of a 9-inch (23cm) springform pan and bake in the preheated oven for 15 minutes. Allow the crust to cool.
4.In a large mixing bowl, beat the room temperature cream cheese and sugar until creamy and smooth. Add in the lemon zest, yogurt and lemon juice, mixing until well combined. Add the eggs one at time, mixing until just blended.
5.Pour the mixture over the cooled crust and place in the preheated oven to bake for 45-50 minutes. Once baked, allow the cheesecake to cool down to room temperature before serving.
