Ingredients

100 g butter
200 g brown sugar
250 ml treacle
2 eggs , lightly whisked
600 g plain flour
150 g self raising flour
1 tablespoon ground ginger
1 tablespoon ground cinnamon
1 1/2 teaspoons ground cloves
1 teaspoon bicarbonate of soda
My Favourite Gingerbread (Lebkuchen) is a German-style gingerbread that's perfect for the holiday season. Made with a blend of spices, including ginger, cinnamon, and cloves, this gingerbread has a warming and comforting flavour that's perfect for chilly winter days. Traditionally, this recipe is cut into fun shapes like gingerbread men and stars, but you can also get creative with your cookie cutters and make other shapes as well. Whether you're leaving these treats out for Santa or bringing them to a holiday party, they're sure to be a hit with everyone who tries them.

Instructions

1.In a large bowl, cream butter and sugar until light and fluffy.
2.Add the treacle and eggs, mix well.
3.In another bowl, combine the flours, ginger, cinnamon, cloves and bicarbonate of soda.
4.Gradually stir into the creamed mixture, stirring until well blended.
5.Knead the dough, and cover it and chill for 1 hour or more.
6.Preheat oven to 180 C / Gas mark 4. Grease baking trays.
7.Divide chilled dough into quarters, to make it manageable.
8.On a lightly floured surface, roll each quarter to about 1cm thickness, very gently.
9.Use cutters to shape the dough into gingerbread men, stars, or any other shape.
10.Place pieces about 2.5cm apart on the prepared baking trays.
11.Bake in preheated oven for approximately 8 to 10 minutes.
12.Allow gingerbread to cool on the baking tray for 5 minutes before removing to a wire rack to cool completely.
