Ingredients

2 tablespoons gram flour
100 g curds , beaten
6 cups hot water
1 teaspoon salt
1 tablespoon oil
1 teaspoon mustard seeds
1/4 teaspoon methi seeds ( fenugreek seeds )
1/4 teaspoon hing water ( asafoetida water )
1 -2 red chile
2 -3 curry leaves
1 -2 clove
1 -2 green cardamoms
2 -3 green chilies
1 teaspoon ginger
1 tablespoon gud water ( jaggery water ) or 2 teaspoons sugar
Gujarati Kadhi is a popular dish from Gujarat, India. It is a sour and creamy yoghurt-based dish which is seasoned with a range of spices and usually eaten with steamed rice. This dish is a mainstay of Gujarati cuisine which is known for its vegetarian dishes with a distinct sweet and sour flavour. A perfect comfort food, this dish is enjoyed during colder months and can be customized by adding seasonal veggies or pakoras.

Instructions

1.In a bowl, mix together gram flour, curd, salt and water.
2.Heat oil in a pan and add mustard seeds, fenugreek seeds, red chilli and curry leaves.
3.Once the seeds start to splutter, add clove, green cardamoms, green chillies and ginger.
4.Add the gram flour mixture to the pan and stir well to avoid lumps.
5.Add jaggery water or sugar and let the kadhi simmer for 10-12 minutes until it thickens slightly.

PROS

Gujarati Kadhi is a comfort food that is not too spicy and has a creamy and tangy flavour which can be enjoyed with rice.

It is also a healthy option as it contains curd which is good for digestion.

It is easy and quick to make with easily available ingredients.

CONS

This dish has a sour flavour which may not be liked by everyone.
