Ingredients

2 cups diced bell peppers ( mixed colors is nice )
1 jalapeno , minced
3 garlic cloves , minced
1 teaspoon salt
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon chili powder ( to taste )
1/2 lime
3 tortillas or 2 cups cooked rice
salsa ( for serving )
chopped scallions ( optional ) or cilantro ( optional )

Instructions

6.Add salt, cumin, coriander, and chili powder to the skillet, and stir until well combined.
7.Squeeze the juice of half a lime into the skillet and stir to combine.
8.Return the tofu to the skillet and stir until well combined with the vegetables.
9.Serve the tofu scramble hot with tortillas, cooked rice, salsa, chopped scallions, or cilantro, as desired.
