Ingredients

1 tortilla ( I use low carb and fat free ones , but you do n't have to )
1 mozzarella string cheese ( I use organic )
1 slice white onion ( you decided thickness )
1/4 cup diced tomato
1/4 cup spinach leaves
My favorite meal is a healthier twist on a classic quesadilla. Instead of using a flour tortilla and meat, I use a low-carb and low-fat tortilla topped with mozzarella string cheese, tomato, onion, and spinach leaves. This meal is quick and easy to make and also provides a good source of carbohydrates, fiber, and vitamins. It's perfect for a quick weeknight dinner or even a lazy weekend brunch. Plus, it's a great vegetarian-friendly option that even meat-lovers can enjoy!

Instructions

1.Preheat a non-stick pan over medium heat.
2.Place the tortilla in the pan and top with the string cheese, onion, tomato, and spinach leaves.
3.Fold the tortilla over to create a half-moon shape.
4.Cook for 2-3 minutes on each side or until the cheese is melted and the tortilla is crispy.
5.Serve hot and enjoy!

PROS

This meal is quick and easy to make, perfect for a busy weeknight dinner.

It’s also a great option for a healthier take on a classic quesadilla, using low-carb and low-fat tortillas and lean proteins like string cheese.

This meal is also vegetarian-friendly.

CONS

This meal may not be as filling as a traditional quesadilla made with meat, and some may find it lacking in flavor compared to a more dressed-up version.

It may also not be the healthiest option for those watching their sodium intake due to the use of processed cheese.

HEALTH & BENEFITS

This meal provides a good source of carbohydrates for energy, and also includes a variety of healthy vegetables like onion, tomato, and spinach which provide vitamins, minerals, and fiber.
The use of low-carb and low-fat tortillas can also make this meal more friendly for those watching their calorie and carbohydrate intake.
