Ingredients

1 lb ground buffalo meat or 1 lb ground beef
4 -6 slices bacon , cut into 1/2 in . chunks
1 tablespoon olive oil
3 carrots , chopped
1 large sweet onion , chopped
1 head garlic , minced
1 can pinto beans
1 can diced tomatoes
2 teaspoons chili powder ( or more )
1 bay leaf
1 teaspoon salt ( or more )
1 dash ground cayenne pepper ( or more )
1 teaspoon oregano
shredded cheese ( optional )
Chili con carne is a classic dish that originated in Texas, but has since become a popular meal across the United States and beyond. My version of this dish includes ground buffalo meat for a healthier twist, along with bacon for extra flavor. Instructions

1.Heat the olive oil in a large pot over medium heat. Add the bacon and cook until crispy and brown.
2.Add the ground buffalo meat or beef to the pot and cook until browned, breaking it up with a spoon as it cooks.
3.Add the chopped onions, minced garlic, and carrots to the pot, stirring occasionally until the vegetables are softened.
4.Add the can of pinto beans, can of diced tomatoes, two teaspoons of chili powder, bay leaf, teaspoon of salt, dash of cayenne pepper, and teaspoon of oregano to the pot, stirring well to combine.
5.Bring the mixture to a simmer and let cook for 45 minutes, stirring occasionally. Remove the bay leaf and season with additional salt and cayenne pepper to taste.
6.Serve hot with a sprinkle of shredded cheese if desired.
