Ingredients

1 1/2 lbs boneless skinless chicken tenderloins
1/2 cup flour
salt and pepper , to taste
2 tablespoons olive oil
1/4 cup vodka
1 cup low sodium chicken broth ( divided )
2 tablespoons fresh lemon juice
1/2 cup tomatoes , chopped and seeded
1 tablespoon sour cream
1 tablespoon skim milk
1/2 cup mixed mushrooms
1 tablespoon minced onion
1 tablespoon minced garlic
1/4 tablespoon butter
1 tablespoon parsley
My Chicken Pomodoro is a simple yet delicious dish that takes inspiration from the flavors of Italy. The chicken is first coated in flour, salt and pepper before being cooked to perfection on the stovetop. Instructions

1.Rinse chicken and pat dry. Coat each tenderloin with flour, salt and pepper and set aside.
2.In a large skillet, heat olive oil over medium heat. Add chicken tenderloins and cook for 2-3 minutes per side until browned. Set chicken aside.
3.Add vodka to the skillet and stir, scraping any bits from the bottom of the pan. Add 1/2 cup of chicken broth and lemon juice and reduce for 2-3 minutes.
4.Add tomatoes, sour cream and skim milk. Stir and simmer for 5 minutes or until sauce thickens.
5.In another skillet, sauté the mixed mushrooms, onions and garlic in butter over medium heat until tender.
6.Mix the mushrooms and chicken with the tomato sauce. Simmer for 5 minutes to until heated through. Garnish with parsley and serve hot.
