My Big Fat Greek Fried Chicken is a take on the classic American fried chicken with a Mediterranean twist. The recipe features a hearty chicken cut into pieces that marinated in a mixture of cold water, olive oil, salt, and lemon slices, then fried to perfection and served hot and crispy. The addition of My Big Fat Greek Seasoning adds a bold flavor and aromatic aroma reminiscent of traditional Greek cuisine. This dish is perfect for a big Sunday lunch with your family or as a crowd-pleaser at your next potluck party.

Instructions

1.Rinse the chicken pieces thoroughly and pat dry with paper towels. Place them in a large mixing bowl.
2.In a separate mixing bowl, whisk together the cold water, extra virgin olive oil, fine sea salt, and lemon slices. Pour this mixture over the chicken pieces and let them marinate in the fridge for 4-6 hours.
3.In a shallow dish, mix together the all-purpose flour, fine sea salt, and My Big Fat Greek Seasoning.
4.Heat canola oil in a large pan over medium-high heat. While the oil is heating up, dredge the chicken pieces in the flour mixture, shaking off any excess.
5.Once the oil is hot, carefully place the chicken pieces inside the pan. Cook for 10-15 minutes per side, until golden brown and crispy.
6.Use tongs to remove the chicken pieces from the pan and place them on a wire rack to cool and drain off any excess oil.

PROS
