Buttermilk biscuits are a staple in Southern American cuisine and have been enjoyed for generations. With their crispy exterior and soft, pillowy interior, they are perfect for breakfast, brunch, or as a side dish for any meal. They are traditionally paired with fried chicken, country ham, or sausage, and often served alongside gravy made with pan drippings. My Best Buttermilk Biscuits recipe has been tried and tested to achieve the perfect balance of flaky and delicious, just like grandma used to make!

Instructions

.Preheat the oven to 425°F / 220°C.
.In a large mixing bowl, whisk together the all-purpose flour, kamut flour, baking powder, baking soda, salt, and raw sugar until thoroughly combined.
.Using a pastry cutter or your fingertips, work the cold, cubed butter into the dry ingredients until the mixture contains pea-sized chunks of butter.
.Gradually pour 3/4 cup of chilled buttermilk into the bowl and stir with a fork until dough comes together in large clumps.
.Dust a clean surface with flour and turn the dough out onto it.
.Gently press the dough into a thick rectangle and fold it into thirds like a letter, repeating this process once to create layers in the biscuit dough.
.Dust a biscuit cutter or other circular cutting tool with flour and press it into the dough, removing biscuits carefully and placing them on a greased baking sheet.
.Brush the tops of the biscuits with buttermilk and bake for approximately 12-15 minutes until golden-brown on top.
