Ingredients

3 tablespoons butter

500 g gravy beef
2 cloves garlic , chopped
1 slice bacon , chopped roughly
8 pickling onions , peeled and left whole
350 g button mushrooms , whole or cut in half if they are large
125 ml tomato paste
250 ml red wine ( whatever you prefer , I usually use a blend )
125 ml beef stock
salt and pepper
1 teaspoon fresh thyme

Instructions

4.Stir in the tomato paste, red wine, beef stock, salt, pepper, and thyme.
5.Bring to a boil, then reduce the heat to low and let simmer for 2-3 hours, or until the beef is tender.
6.Serve hot with crusty bread or mashed potatoes.
