1/4 teaspoon coriander seed
1/4 teaspoon anise seed
2 tablespoons pepitas ( pumpkin seeds )
3/4 teaspoon dried chili pepper flakes
3/4 teaspoon black peppercorns
2 whole cloves
1/4 cup sesame seeds , toasted
2 tablespoons sesame seeds , toasted
1 stick cinnamon
1 cup oil , divided
1 corn tortilla ( let air dry while assembling ingredients )
1/4 bolillo roll , sliced crosswise
1/4 ripe plantain , sliced
1/4 cup shelled raw peanuts
1/3 cup blanched almond
1 tablespoon blanched almond
1/3 cup raisins
1 leaf fresh thyme , from 1 sprig
1 sprig Italian parsley
1 tablespoon salt
2 tablets mexican chocolate , chopped ( 6.2 ounces )
1/2 - 1 cup sugar , according to taste

Instructions

1.Preheat the oven to 350 degrees F
2.Combine the tomatoes, onion, and garlic in a roasting pan and roast for 30 to 40 minutes until soft and charred.
3.Broil for 3 minutes until blackened.
4.In a dry skillet over medium heat, toast the cacao beans, coriander seed, anise seed, pepitas, chili pepper flakes, black peppercorns, cloves, sesame seeds, and cinnamon stick for 5 minutes, or until fragrant, stirring frequently.
5.In a large skillet over medium heat, heat 1/4 cup of the oil. Fry the tortilla, bolillo roll, plantain, peanuts, almonds, raisins, thyme, and parsley for about 5 minutes, or until golden brown.
6.Add the contents of both skillets and the salt to a blender and blend until smooth.
7.In a large pot over medium heat, heat the remaining 3/4 cup of oil until hot.
8.Add the blended sauce to the pot a little bit at a time, stirring constantly. 9. Add the chocolate and sugar, stirring until the chocolate is melted and the sugar is dissolved.
9.Bring the mixture to a simmer and cook for 20 to 25 minutes, stirring frequently, until the sauce has thickened and the flavors have melded together.
10.Taste and adjust seasonings as needed. Serve with your favorite Mexican dishes.
