Ingredients

1 tablespoon oil
1 small onion , chopped
1 green chili pepper , deseeded and chopped
1 tomatoes , ripe , sliced
1 green mango , sliced ( optional )
1 3/4 cups coconut milk
1 3/4 cups water ( equal to coconut milk )
1/2 teaspoon turmeric
1/2 teaspoon paprika
1/2 teaspoon ground coriander
salt
10 fresh curry leaves or 15 dried curry leaves
1/2 cup fresh coriander , chopped
1/2 lemon , juice of
4 eggs , raw or hard boiled

Instructions

1.Heat oil in a pan over medium heat.
2.Add chopped onions and chili pepper, and sauté until onions turn translucent.
3.Add sliced tomatoes, green mango (optional), turmeric, paprika, ground coriander, salt and curry leaves. Stir well.
4.Add coconut milk and water, bring to boil and simmer for 10 minutes.
5.Add raw/hard boiled eggs and cook in the sauce for a few minutes.
6.Garnish with fresh coriander and lemon juice.
7.Serve hot with bread or rice.
