Ingredients

2 tablespoons yellow mustard seeds
4 medium shallots , thinly sliced
2/3 cup sherry wine vinegar
1/4 cup water
1/2 cup heavy cream
1/2 cup unsalted butter , softened
1/4 cup whole grain mustard
salt & freshly ground black pepper
4 1/2 lbs green beans , trimmed

Instructions

1.In a small skillet, toast the mustard seeds over medium-high heat until they begin to pop, for 2-3 minutes. Transfer the seeds to a mortar and pestle and grind until coarsely ground.
2.In a large pot, bring the water, vinegar and shallots to a boil, then simmer for 10 minutes or until the shallots are tender.
3.Add the cream, butter, whole grain mustard, ground mustard seeds, salt and pepper and whisk until the butter is melted and the sauce is smooth.
4.In a large pot of boiling salted water, blanch the green beans for 2-3 minutes or until crisp-tender, then drain well. Serve the green beans hot with the mustard sauce on top.
