Ingredients

2 tablespoons brown mustard seeds
1/2 teaspoon fennel seed
1 teaspoon coriander seed
1/2 teaspoon cumin seed
1/2 teaspoon whole black peppercorn
1 teaspoon dried thyme
2 teaspoons dry mustard
1/2 teaspoon ground ginger
1/2 teaspoon coarse salt
1/2 teaspoon sugar
2 lbs pork tenderloin
2 tablespoons Dijon mustard
2 tablespoons dry white wine
1 can chicken stock
1 tablespoon flour
1/2 pint blackberry
2 teaspoons fresh thyme , chopped , for garnish

Instructions

1.Preheat the oven to 450°F.
2.Combine brown mustard seeds, fennel seeds, coriander seeds, cumin seeds and black peppercorns in a spice grinder and grind until fine.
3.In a small bowl, mix together the ground spice and the dried thyme, dry mustard, ginger, salt, and sugar.
4.Rub the spice mixture all over the pork tenderloin and let it sit for at least 10 minutes.
5.In a small bowl, mix together the Dijon mustard and white wine.
6.Roast the pork tenderloin in the oven for 25 minutes until the internal temperature reaches 145°F.
7.Let the pork rest for 5-10 minutes before slicing and serving with the blackberry mustard sauce.
8.For the blackberry mustard sauce, whisk together the chicken stock and flour in a small saucepan and cook over medium heat until it thickens a bit.
9.Add in the blackberries and cook for another 5 minutes.
10.Remove from heat, strain the sauce through a fine mesh strainer and stir in the chopped fresh thyme.
11.Serve the sauce with the sliced pork tenderloin.
